Mashed Cauliflower

Great healthy substitute for mashed potatoes.

Ingredients:
- cauliflower (fresh or frozen)

Of course, you can add any optional ingredients that you enjoy with potatoes (spray butter, fat free cheese, etc).

Instructions:
- Add cauliflower to a pot and add water until vegetables are covered.
- Boil until cauliflower can be mashed with a fork.
- Drain, then use a hand mixer to "mash" them.
- Add salt, pepper, and other seasonings to taste (if desired)
